Crema De Fruta

Crema de fruta is a Filipino dessert made with layers of sponge cake, sweetened fruit, and creamy custard, usually topped with a colorful assortment of fruit like pineapple, mango, or peaches. It’s a refreshing and indulgent treat, perfect for special occasions or family gatherings.

Cake:
1 1/4 cups flour
3/4 cups sugar
6 eggs, yolks and white separated
1tsp. Grated lemon rind
1/4 tsp. Salt
1/4 cup butter, melted

Filling:
1 cup sugar
1/3 cup flour
2 3/4 cups cream or evaporated milk
3/4 cup water
5 egg yolks
3/4 cup water
1 tbsp. Vanilla essence

Topping:
2 tbsp. Unflavored gelatin powder
1/2 cup cold water
1/2 cup boiling water
1 can fruit cocktail, drained
3 pcs. Peaches, cut into half

CAKE:
1. Preheat the turbo broiler to 325°F / 160°C.
2. Butter the baking dish.
3. In a separate bow, beat eggs until fluffy, add in sugar until smooth and thick.
3. Combine flour, grated lemon and salt.
4. Stir melted butter. Pour into the buttered baking dish.
5. Bake 15 to 20 minutes in the turbo broiler, until center springs back when lightly touched.
6. Let it cool for 10 minutes.
7. Split cake horizontally into two layers.

FILLING:
1. Combine sugar, flour, egg yolks, water and vanilla essence in a bowl.
2. Pour cream or evaporated milk and mix well.
3. Cook into turbo broiler using the same setting for 15 minutes and stir until mixture becomes thick.
4. Let cool completely.

TOPPING:
1. Sprinkle gelatin powder onto the cold water and set aside.
2. Let it stand for 5 minutes.
3. Pour in boiling water and stir until gelatin powder completely dissolved.
4. Set aside.

TO ASSEMBLE:
1. Put 1pc. Slice cake layer to a glass dish.
2. Spread half of the filling and fruit cocktail over the layer.
3. Top with the remaning layer and remaining filling,
4. Arrange peaches and cherries on top and cover with gelatin mixture.
5. Chill for 4 to 8 hours before serving.
