Patatim

Patatim is a Filipino dish made out of slowly braised pork leg. 'Pata' is a Spanish word for 'leg' and Tim is a Chinese word which is conclusively and probably refers to a cooking style or manner on how a dish is cooked.

Good for 8 to 10 persons

1kg. Pata, front
2pcs. Onion, sliced
1/4 cup Vinegar
1/2 cup Soy Sauce
1/2 cup Brown Sugar
1 cup Banana Blossom (Bulaklak ng Saging)
1 cup Soda
5pcs. Dry Bay Leaves
1/2tsp. Salt
1/2tsp. Pepper
1pc. Pork Cube
432g. Pineapple Chunks
Spring Onion (Optional)

Cooking time: 30 minutes

1. Rub the Pata with salt, pepper, onion and sugar.
2. Add the soy sauce, vinegar, soda and marinate it for 30 minutes.
3. Put the marinated pata into the inner pot and top it with pineapple chunks with juice, banana blossom, bay leaves and onion.
4. Close the cover and slide to the left to lock.
5. Plug the Imarflex Turbo Cooker (IPC-600D) into the convenience outlet.
6. Press the MENU button and select TENDON, the default time (30 minutes) will appea on the LCD.
7. The icon will start blinking and will automatically heat up.
8. When the timer is done, tilt the pressure regulator valve to release the pressure inside.
9. Slide the cover to the right and pull up to open.
10. Transfer into a serving platter then pour the sauce over.
11. Sprinkle with spring onion. Best serve hot.
